I used to be a real carnivore. If a meal didn't have at least some meat in it, I had the feeling I'd eaten nothing but air. But things can change, and today I like to dabble in the forgotten dark arts now and again. Eating vegetarian is healthy and ecologically friendly.
Did you know that you the average diet only needs 100 grams of meat per day per person? Since meat usually is the biggest expenditure, eating fleshless also means eating cheap! So, enough reasons to stick to those veggies once in awhile.

This quiche only needs a handful of ingredients and preparation is quick and easy. We made this one chock full with spinach, Popeye would be proud. However, we recommend all who are not a cartoon sailor to let a salad accompany this quiche for some more variety.
Spinach Feta Quiche
Preparation time: 15 minutes
Cooking time: 45 minutes

240 ml milk
170 gr feta cheese
700 gr spinach (chopped and frozen)
olive oil

Preparation
Preheat your oven to 190°C/375°F.
Cook the spinach according to the instructions on the package and drain in a strainer once ready.
Take a fork and press the spinach to the sides of the strainer to speed up the draining.
Combine eggs, milk and cheese and beat thoroughly.
Season with salt and pepper.
Place the dough in a pie pan.
Spread out the spinach.
Pour the egg mixture over the top.
Drizzle with olive oil and bake for 40-45 minutes.
